Spirulina is considered one of the world’s first superfoods. A staple food source for the Aztecs and other Mesoamericans who harvested wild spirulina from Lake Texcoco in central Mexico, wild spirulina is still harvested today from Lake Chad in west-central Africa. Wild blue-green algae thrive in lakes and inland bodies of water that are warm and alkaline. Spirulina contains 55-70% biologically, complete protein content by dry weight – which translates to 2 grams of protein per teaspoon – and it is also a source of beta-carotene, various minerals, and gamma linolenic acid, an essential omega-6 fatty acid.
